Three-Grain Molasses Bread

Okay, so here's the recipe, adapted from "1001 Low-fat vegetarian recipes" by Sue Spitler (2nd ed.)

Three-Grain Molasses Bread

1 c. all-purpose flour
1 c. whole wheat flour
1 c. yellow cornmeal
1 t. baking soda
1/2 t. salt
1 1/4 c. water
1/2 c. light molasses (I used blackstrap because that's what I had)
1/2 c. packed light brown sugar
3 T. vegetable oil

Mix all ingredients in a large bowl and pour into a greased 9x5 loaf pan. Bake at 350 until toothpick comes out clean, about 1 hour. Remove from pan and let cool on wire rack.

It's very easy, and soo yum. Have some directly from the oven, it's worth it.
